Black Krim

This is my all-time favorite tomato. It is, alas, finicky, and I have learned it requires exceptional weather patterns in order to develop its unique flavor. In mediocre years, while it still is a worthy tomato, it falls somewhat short of the magical flavor of which it is capable.

At their best, Black Krim tomatoes have an intense smokiness, combined with the typical earthy flavors common to black tomatoes, with the added bonus of an almost salty finish. The flavor is awash in subtlety, with layers that can be uncovered simply by choosing a different olive oil in which to dress them.
